Mexican Picadillo
I constantly get asked to provide healthy Mexican recipes besides fajitas. This is a good example with a balance of protein and starchy/non-starchy vegetables. The original recipe is with ground beef, but I prefer to use a leaner protein as ground turkey.
Picadillo is a traditional dish in many Latin American countries and Philippines made mainly of ground meat ( most common beef), tomatoes (tomato sauce may be used as substitute), also other ingredients of the region as raisins, olives, potatoes, etc.
The word picadillo comes from the Spanish word picar, meaning “to mince” as most of the ingredients are minced or diced. Picadillo is also used as stuffing for empanadas and even turkey for Christmas.

Instructions:
- Heat the olive or avocado oil in a large skillet over medium heat. Place the chopped onion and cook until slightly gold.
- Add the carrots and potatoes to the skillet constantly stirring until they are starting to get soft. Add the ground turkey and continue stirring until it looks cooked.
- Add the chicken stock, tomato sauce and all the remaining ingredients. Cook for another 2 - 5 minutes and serve.
