Delicious Easy Flourless Pancakes
If you are like me and cannot say good-bye to pancakes, this is a great option. These pancakes are not only delicious but healthy, packed with protein and fiber. These pancakes are also gluten and sugar-free, so it is a great option for those with gluten sensitivities, celiac disease or diabetes.
Psyllium husk is a great fiber that has many benefits including relieving constipation, lowering blood sugar levels and cholesterol, boosts satiety and aids weight loss. It is a soluble fiber derived from the seeds if Plantago Ovata, and the main ingredient of Metamucil products.

I like how the orange flavor gives a twist, but if you prefer you can use plain psyllium husk or any other flavor available; just watch the ingredients and try to get organic, natural flavoring and sweeteners as some versions have artificial ingredients and aspartame.
I find the oven version easier, but you can also try it in the skillet. You would need to wait a couple minutes to get a thicker mix and add a lot of butter to the skillet. It requires some practice to flip them, but the butter will help that they do not get too sticky. You can also add 1/2 tsp of baking soda to make them more fluffy

Ingredients:
Instructions:
- Preheat over at 350 F
- Mix cottage cheese, psyllium husk, eggs and egg whites in a bowl
- Spoon the mix to form the pancakes on a pan with baking sheet, 1 inch a part.
- Bake in the oven for 30 minutes or until golden.
- Drizzle sugar-free maple syrup and garnish with fresh berries.
